Kebab (also transliterated as kabab, kebap, kabob, kibob, kebhav,kephav) refers to a variety of meat dishes in Turkey, consisting of grilled or broiled meats on a skewer or stick. The most common kebabs include lamb and beef, although others use goat, chicken, fish, or shellfish.




Tantuni is a kebap species which isn't known very well out of Mersin.It is cooked on a special frypan.It is known to have been invented in Mersin.It is cooked with veal which is cut off by meat cleaver,pepper and liquid oil.Usually,it is served in a small phyllo which has special salads.


Gözleme is a savoury Traditional Turkish hand made and Hand rolled pastry.

Fresh pastry is rolled out, the thinly rolled out dough is then filled and sealed,

then cooked over a griddle, traditionally this is done on a saç. Varieties include, Gözleme with:
Spinach and Fetta Cheese, Spinach and Fetta and Minced meat, Spinach and Fetta and Egg,
Egg, Minced Meat, Cheese, Potatoes, Mushroom.


Ayran or airan (Turkish:ayran) is a drink made of yoghurt and water, popular in Turkey.
